Potato Pancakes

3 or 4 medium sized raw potatoes.
one egg
1/2 to 2/3 cup of flour
1/2 tsp. salt; 1/4 tsp pepper
optional chopped 1/2 small onion.


Directions:
Grate the potatoes in blender or use hand grater. Add the flour, egg, salt and pepper (and onion if you choose to use it) to the blender with the raw grated potatoes and blend for a few seconds until the
ingredients are all mixed together. Sometimes you may need to add a little more flour depending on the size and water content of the potatoes used; but too much flour will make the pancakes too doughy. Fry
about four at a time in hot oil or shortening using a large skillet, turn when bubbles appear. The second side doesn't take as long as the first side. Be sure the oil is hot or the pancakes will be limp not
crispy. Place them on a paper towel to absorb the oil, and serve (and eat immediately). I like to salt them fairly heavily on my plate before I eat them. Sometimes they go well with applesauce or baked beans and hot tea with lemon.
