Blueberry Buckle

3/4 cup sugar                                 1/2 cup milk
1/2 cup shortening                            2 cups blueberries
1 egg                                          1/2 cup sugar
2 1/2 cups all-purpose flour                 1/2 tsp cinnamon
2 1/2 tsp baking powder                      1/4 cup butter or margarine

Preheat oven to 350

Beat 3/4 cup sugar and shortening till light and fluffy
Add egg; beat well
Stir together 2 cups of the flour, the baking powder, and 1/4 tsp salt
Add flour mixture and milk alternately to beaten mixture. Beat smooth after each addition
Spread in a greased 9x9x2 baking dish
Top with blueberries
Combine remaining 1/2 cup flour, 1/2 cup sugar, and cinnamon; cut in butter/margarine. Sprinkle over blueberries
Bake at 350 for 45 to 50 minutes

Decadent Blueberry Buckle

Top Blueberry Buckle with the following sauce:

1 cup water
1 pint blueberries
3/4 cup sugar
1 Tbsp cornstarch
1/8 tsp salt
1 tsp lemon juice

Heat water in a 2 qt. saucepan until it boils. Add blueberries and return to a boil
In a small bowl, combine sugar, cornstarch, and salt.
Add sugar mixture to blueberries and water. Continue cooking. Stir occasionally until thick.
Add lemon juice.

Use to top each piece of blueberry buckle as it is served.
