Aunt Helen's Hot Milk Cake

4 eggs
2 cups sugar
1/4 lb butter
1 tsp lemon extract
2 cups flour
1 cup milk - hot
1 heaping tsp baking powder
pinch of salt

Preheat oven to 350. Grease and flour A 13" X 5" 2" pan

Beat eggs and sugar. Add one cup of flour and beat again. Add second cup of flour, baking powder and salt and beat again. Add hot milk, butter and lemon extract and beat until smooth ... about 2 minutes.

Bake at 350 for 30 minutes.

Split cake in half and spread bottom layer with apple currant jelly. Replace top half and frost with fudge icing.
