Cioppino (Seafood Stew)

Feel free to vary the seafood combinations any way you'd like with different types of fish, scallops, lobster, mussels, crab, etc. Add additional vegetables like corn or green beans.

1 can minced clams (or substitute 2 dozen live clams)
1 lb medium shrimp, peeled and deveined
1 lb fish fillets, cut into 1" cubes
2 medium onions diced
2 carrots sliced thin
6 - 10 cloves garlic, peeled and minced
1/4 cup olive oil (not extra virgin)
1 cup dry red wine
2 lb plum tomatoes (or canned tomatoes)
1 Tbsp Italian seasoning
1/2 tsp cayenne
1 tsp red pepper flakes
1/2 cup parsley
3 cups water

Heat oil in large pot over medium-high heat, add onions and saute for two minutes
Add garlic and saute for 1 minute
Add carrots and all spices, tomatoes and peppers
Add water and heat to simmering
Add fish and shrimp and cook unti fish flakes (4-5 minutes)
Add minced clams
Serve over rice or linguine
