Preheat Oven to 350 Yield: About 6 dozen cookies
2 cups granulated sugar
1/2 cup oil
2 tsp vanilla
4 oz unsweetened chocolate, melted
2 cups flour
2 tsp baking powder
1/2 tsp salt
1 cup confectioners sugar
Mix granulated sugar, oil, vanilla and chocolate. Blend in eggs one at a time. Stir in flour, baking powder and salt. Refrigerate at least three hours (overnight is better).
Drop dough by teaspoonfuls into confectioners sugar, roll into sugar and shape into balls.Place about 2 inches apart on a greased baking sheet. Bake 10 to 12 minutes but do NOT overbake.
