Sloppy Steves (Vegetarian Sloppy Joes)    

Prep Time: 30 minutes.

1 lb firm tofu, frozen overnight, thawed, squeezed dry, and crumbled. You can also do this without freezing but the freezing makes the texture better. (BTW, the big trick with tofu in most cases, is to press out the excess water in a tofu press. This can simply be a a cookie sheet propped up a little on one end with the low end draining off into the sink. Put the tofu on it. Put another cookie sheet on top, or a plate on top of the tofu and something heavy like a huge book or a large cat. This allows the tofu to absorb the flavor of whatever you add to it.)

1 large onion, chopped
1 large red or green pepper, chopped
2 Tbls nutritional yeast (optional)
2 Tbls soy or tamari sauce
1/3 cup ketchup, plus 1cup tomato puree, plus tomato paste to bring total volume to 1.5 cups
2 Tbls Dijon mustard
1 Tbls molasses brown sugar or sucanat (molasses is my preference)
1 Tbls Vinegar rice wine, red or white (I prefer rice wine)
2 Tbls lemon juice
Your favorite hot sauce to taste
Fresh ground Black pepper to taste

Crumble tofu into non-stick frying pan (or use a little oil or cooking spray) Add onion, peppers and nutritional yeast. Saute all three until tofu begins to brown. (Browning isn't mandatory) Add other ingredients. Simmer ten minutes, stirring occasionally.

Serve on buns, bread or rice.

You can also add grated carrot, sauteed mushrooms or anything else you
like. Depending what you add to this you won't need/want anything else.
It's a pretty complete meal (nutritionaly).
